Ingredients
- 1 boned and skinned chicken breast,
- 1 onion, finely chopped
- 450g boiled potatoes, diced
- 100g cooked green beans cut into 1 inch pieces
- 2 pickled cucumbers, thinly sliced
- 10 black olives, chopped
- 150g cooked peas
- 2 hard-boiled eggs sliced
- Small handful of flat leaf parsley
- Salt and freshly ground black pepper
- 90g Hellmann’s Mayonnaise
Instructions
Poach the chicken in water for 20 mins, leave to cool and cut into cubes
Mix the onion and chicken in a salad bowl
Stir in the potatoes, cucumber and green beans
Add the olives and peas.
Stir in the eggs, taking care not to break them up too much,
add the parsley and season to taste.
Carefully stir in the mayonnaise and serve immediately
